ALMOND FREE MARZIPAN

ALMOND FREE MARZIPAN

It’s very inconvenient to have “IgG and IgA food sensitivity” to almonds and in particular, if you’re gluten/ grain free like me. It’s inconvenient because many gluten/grain free alternatives contain almonds or almond flour. Well, I guess the result is that I make more homemade breads and […]

GLUTEN FREE CINNAMON CHRISTMAS COOKIES

GLUTEN FREE CINNAMON CHRISTMAS COOKIES

These cinnamon Christmas cookies are made from a gluten free shortcrust pastry. I like them because they’re not too sweet but still enough sweetness for me 🙂 Since going sugar free (traditional sugar) about three years ago my tasts buds have changed, so I don’t need my treats to be very […]

GLUTEN FREE PEBERNØDDER

GLUTEN FREE PEBERNØDDER

A gluten free version of the traditional Danish Christmas biscuits called “Pebernødder”.

If you use baker’s ammonia (ammonium carbonate) they’ll get really light and crisp but if you don’t have it in your pantry or know were to get it, you can use baking powder instead. Baker’s ammonia is an ancestor of modern baking powder, which was originally made from the ground antlers of reindeer. It’s still commonly used in Scandinavia and Germany. Only use baker’s ammonia in cookies and pastries that are small enough to allow the ammonia odour to dissipate while baking or it can impart an unpleasant ammonia flavour.

INGREDIENTS

60g Butter, ghee or extra virgin coconut oil

60g Coconut sugar

1 Egg

100g Sorghum flour or other gluten free flour

20g Arrowroot powder or corn starch

1 tsp Coriander powder

1 tsp Cinnamon powder

1/2 tsp Ginger powder

1/4 tsp Ground pepper

1/4 tsp Clove powder

1/2 tsp ammonium carbonate (baker’s ammonia) or baking powder

DIRECTIONS

Set the oven to 170C degrees (340F) and line 2 baking trays.

Mix butter, egg and coconut sugar until the coconut sugar has dissolved.
Add the rest of the ingredients and mix about 10 min.

Leave the dough to cool in the fridge for about 30 minutes.

Roll the dough into long sausage shape until it’s about 1-2cm in diameter, cut the dough for every 1cm with a knife and roll each piece into a ball.

Place the balls unto a lined baking plate and bake it for about 10 minutes depending on the size at 170 C degrees.

HOMEMADE MARSHMALLOWS

HOMEMADE MARSHMALLOWS

I’ve been making my own gelatine gummies but now I’m also getting my hand into making homemade marshmallows using grass fed gelatine powder. It’s a great way to make nutritious treats but it’s still a treat so only consume these homemade marshmallows occasionally. Stay tuned for […]

THUMBPRINT COOKIES

THUMBPRINT COOKIES

I’ve made these delicious gluten, dairy and processed sugar free Thumbprint Cookies a couple of times now. They’re easy to make and I store them in the freezer as they defrost really fast. They’re great for a snack “on the go” or in your kids’ lunch boxes. I’ll […]

FRESH ROASTED DANDELION ROOT

FRESH ROASTED DANDELION ROOT

I’m enjoying my morning tea. This home roasted dandelion root tastes delicious with a hint of caramel and I brew the tea in coconut milk.

Dandelion root is a great substitute for coffee or black tea.

Roast them in the oven at 170 C or 340 F until they’re roasted dark enough for you. Keep an eye and don’t leave the kitchen to avoid burning them.

Experiment how dark or lightly roasted you prefer.

There’re many health benefits drinking dandelion root like supporting liver detox, skin health, digestion and intestinal health as well as immune system function.

It’s rich in calcium, vitamin K, antioxidants and rich in fiber.

You can read more about dandelion tea benefits at www.draxe.com/dandelion-tea/

NUTTY CHOCOLATE ICY POLE

NUTTY CHOCOLATE ICY POLE

I like to always have homemade icy poles on hand in the freezer and then I might “delicioufy” them by dipping them in homemade chocolate just before serving them. What is left of the homemade dark chocolate, I pour into a lined dish to set […]

HOMEMADE MAYO IN 5 MIN

HOMEMADE MAYO IN 5 MIN

There’s no need to buy mayonnaise when you can make it in 5 minutes with a hand stick blender. Most conventional mayos are made from unhealthy, genetically modified canola oil that has been extracted by rendering or using chemicals. Often sugars and preservatives have also […]

POTATO SKIN CHIPS

POTATO SKIN CHIPS

Don’t throw potato skins in the bin or compost them.

Instead cook them! They’re delicious!

Staying with my parents at the moment, the potatoes often get peeled so to use the whole food as I prefer, it just makes sense to cook them.

Mix them with oil and seasoning them before spreading them out on a tray and cook them in the oven at 200 C until nice and crisp.
