BAKED BANANA OATMEAL

BAKED BANANA OATMEAL

I’ve said before that I sometimes make gluten free oatmeal. However, I always add hydrolysed gelatin powder (also called collagen powder) and coconut oil or butter. This way my oatmeal becomes more than just a carbohydrate rich meal. I explain more why in this post where I […]

APPLE CINNAMON OATMEAL W. CARAMELISED APPLES + NUTS

I’ll sometime make gluten free oatmeal but I always add hydrolysed gelatin powder (also called collagen powder) and coconut oil or butter. This way my oatmeal becomes more than just a carbohydrate rich meal. The gelatin/collagen increases your dietary protein and essential amino acids. Amino […]

NEW MINIMAL SHOES WITH TOE ROOM

NEW MINIMAL SHOES WITH TOE ROOM

Are you enjoying your shoes?

I’m enjoying my new minimal shoes from Lems Shoes. More room for my toes compared to most traditional shoes.

They’re very comfortable, light, breathable and without a positive heel.

It’s wellness for my feet and they look great!

It’s an everyday cure for my feet and whole body. Whole-body movement starts at your feet (or arms when hanging).

Are you looking after your feet? I recommend that you do. The rest of your body depends on it!

I love to be barefooted but when I can’t, I go for minimal shoewear. Being barefooted or wearing minimal shoes assist in natural movement. Allowing your body to more naturally and how your body is designed to move.

WHY AVOIDING MEAT ISN’T A SIMPLE ECO-SOLUTION

WHY AVOIDING MEAT ISN’T A SIMPLE ECO-SOLUTION

The road to a sustainable future isn’t black and white. It’s filled with many different tones of grey. For example it isn’t as simple to avoid meat from your plate. Many people have heard about how polluting meat production is. And that is correct when […]

FIRST WILD FOOD THIS YEAR

FIRST WILD FOOD THIS YEAR

Wild mushroom side dish for lunch.

Judas’s ear or Jew’s ear (Auricularia auricula-judae) is an edible mushroom most commonly found on Elder trees (Sambucus nigra).

It grows during the cold season. A great way to get wild foods into your diet when there isn’t much else around compared to the rest of the year.

I lightly simmered Aegopodium podagraria for dinner as a little side dish. Known as Goutweed or Ground Elder.  It’s also great to add in smoothies or a salad.

These first shoots of the year should be particularly delicious.

Here in Denmark a lot of people see them as a weed or even a pest in the garden. I like that I can go out in the garden and pick a nutritious side dish for tonight’s dinner

Spring has just started. It’s a beautiful sunny day so I expose my skin to the sun for the first time this year. I want to start early so my skin can build up its tolerance (pigmentation) for these vitamin D3 rich rays of goodness […]

GRAIN FREE PANCAKES

GRAIN FREE PANCAKES

We’re enjoying gluten and grain free pancakes this Saturday morning with bacon, stewed apples and raspberries.

The bacon is organic and free range. The stewed apples are from our garden and with no added sweeteners. The frozen raspberries are also from our garden.

The pancakes are made from half a mashed banana, three eggs, 1/2 cup coconut milk, two heaped tsp. psyllium husk, and a mix of green banana flour and sorghum flour until right consistency.

FRIDAY SMOOTHIE BOWL

FRIDAY SMOOTHIE BOWL

I felt like “sweetening” this Friday morning with a smoothie bowl and homemade granola. Blend banana and frozen strawberries, kale, coconut milk, vanilla bean powder, collagen protein powder. I used frozen strawberries and kale from the garden. The homemade granola is a mix of nuts, […]
