FIRST WILD FOOD THIS YEAR

Wild mushroom side dish for lunch.
Judas’s ear or Jew’s ear (Auricularia auricula-judae) is an edible mushroom most commonly found on Elder trees (Sambucus nigra).
It grows during the cold season. A great way to get wild foods into your diet when there isn’t much else around compared to the rest of the year.
I lightly simmered Aegopodium podagraria for dinner as a little side dish. Known as Goutweed or Ground Elder. It’s also great to add in smoothies or a salad.
These first shoots of the year should be particularly delicious.
Here in Denmark a lot of people see them as a weed or even a pest in the garden. I like that I can go out in the garden and pick a nutritious side dish for tonight’s dinner
