It’s a grey and overcast day here i Perth today but this soul warming soup is just want is need today. In this moment I’m enjoying the left overs from this Borscht-Inspired Soup.

Previously, I didn’t really know how to cook beetroots and the only way I would eat them was pickled beetroot on paté. I still have to remind myself to buy beetroot from time to time because for many years I didn’t use to buy them unless pickled or I needed them for a certain recipe.

But wow this soup is so delicious, nourishing and soul warming. Our three year old son happily consumed it 😃

Beetroot has such a wide range of health benefits because they are packed with vitamins and minerals like high in immune-boosting vitamin C, fiber, and essential minerals like potassium, manganese and B vitamin folate.

Consuming beets helps lowering you blood pressure, fights inflammation, supports detoxification and it has anti-cancer properties.

INGREDIENTS

1 Brown onion
2 Garlic cloves
2 small Sweet potatoes
2 large Beetroot
1 bunch Broccoli or cabbage
1L Bone broth
Fat to sauté
Coconut cream/milk to serve (optional)

 

DIRECTIONS

Chop up the onion and garlic and sauté them in ghee, butter or animal fat until soft and they turn light brown.

Add roughly chopped sweet potatoes and beetroots, stir and sauté for a minute before adding the bone broth.

Add broccoli or cabbage before putting the lid on and bring it to a gentle boil.

Use a stick blender to blend it until smooth.

Serve with coconut cream.
