FIRST WILD FOOD THIS YEAR

Wild mushroom side dish for lunch.

Judas’s ear or Jew’s ear (Auricularia auricula-judae) is an edible mushroom most commonly found on Elder trees (Sambucus nigra).

It grows during the cold season. A great way to get wild foods into your diet when there isn’t much else around compared to the rest of the year.

I lightly simmered Aegopodium podagraria for dinner as a little side dish. Known as Goutweed or Ground Elder.  It’s also great to add in smoothies or a salad.

These first shoots of the year should be particularly delicious.

Here in Denmark a lot of people see them as a weed or even a pest in the garden. I like that I can go out in the garden and pick a nutritious side dish for tonight’s dinner

SIMPLE GINGER & LEMON TEA

SIMPLE GINGER & LEMON TEA

Lately, I’ve been drinking a simple ginger and lemon tea. It has lots of nourishing and healing properties!

I slice the ginger and put it in a mug. Then I pour boiling water in the mug and let it cool so I can drink it without burning myself. That’s when I add a couple of lemon slices. If you would like it sweetened, you can add a few drops of liquid stevia.

Another little snack for our son’s lunchbox.

Dried fruit contains a lot of sugar like fructose so generally I’m not a big fan as I write in this post.

That said, I like to sneak beets into this fruit leather like in the Strawberry Fruit Leather Recipe by Wellness Mama.

It can sometimes be challenging to keep sugar out of our children’s diet but instead of going completely extreme, I focus on upgrading the sweeter snacks with more nutrition. At least that works best for us at the moment
