This is a very thirst quenching and refreshing drink full with beneficial probiotic bacteria and vitamin C, an important antioxidant. Great to boost your immune system!
This recipe is a first time for me 🙂 We had a lot of lemons so I was looking for ways to use them. Conventional lemonades are full of sugars and I remember seeing recipes for probiotic lemonades using whey. I don’t tolerate dairy including whey so I got the idea of using some of the water kefir grains accumulating in the fridge instead of whey.
The principles are the same as when I make WATER KEFIR. I mix the lemon juice with water and sugar and the water kefir grains will then consume most of the sugars, producing lactic acid and carbon dioxide. This means that your lemonade will also be slightly fizzy which makes it a great replacement for soft drinks laden with sugars.
- 0.5 litre Boiling filtered water
- ¾ cup Coconut sugar (or any sugar)
- 2 litre Filtered water
- Juice of 10 lemons or limes
- 5 tbsp Water kefir grains
Mix the boiling water and sugar in a 4L jug or split into two 2L jugs and stir until dissolved.
When dissolved, add the rest of the water and lemons juice and stir again. Now add the water kefir grains.
Cover tightly and let sit on the counter for 2-3 days. The longer it sits, the less sugar in the final product.
After 2-3 days, keep in fridge and the flavour will continue to develop in the fridge and since the sugar ferments out, it is rather tart. Add a couple drops of stevia if it is too tart for you!
You might want to “outgas” the jug/bottle a couple of times and be careful when open it as it might come out like champagne 😉
Drink a small glass per day.
