HOMEMADE BABA GHANOUSH
Delicious dairy free baba ghanoush and my colleagues and family loves it .
It’s very yummy as dip or on gluten-free/ grain-free bread or crackers.
INGREDIENTS
500g Eggplant (grilled)
1-2 Garlic clove(s)
2 Tbsp Lemon juice
2 tsp Tahini
50g Flesh from young coconut (or yogurt)
4-5 Tbsp Olive oil
Sea salt to taste
Chopped fresh parsley and olive oil, to serve
Grill egg plant in olive oil. I leave the skin on.
Blend eggplant with garlic, lemon juice, tahini, young coconut, olive oil and salt in a Thermomix, food processor or blender.
