DIRTY MATCHA BITES

IMG_4366

A few weeks back I shared the recipe for my CREAMY MATCHA BITES and what a great feedback I got from friends, colleagues and you guys here.

When my partner tasted his first creamy matcha bite he instinctively said that this would be great with a shot of espresso. I followed his recommendation and wow, he was so right 🙂

Just as you think it can’t get any better, you taste these super delicious gelatine bites. They’re heavenly and a little dirty at the same time 😉

INGREDIENTS

4 tbsp Grass fed beef gelatine
1 shot of Espresso (approx. 1/2 cup)
2 cups Coconut cream (or 400ml can)
1/3 cup Coconut oil
2 tbsp Honey or rice syrup
3-5 tsp Green matcha powder
1 tsp Vanilla bean powder
Large pinch of sea salt

DIRECTIONS

Saucepan
In a small bowl, stir the beef gelatine into the shot of espresso (add water if needed so that you’ve 1/2 cup of liquid). Set it aside to let the gelatine bloom for 3-5 minutes.

Add the coconut cream, coconut oil and sea salt to a medium saucepan. Place it over low heat and stir until the mixture is smooth. Turn the heat off and add the bloomed gelatine and continue stirring until the gelatine is dissolved. Then add sweetener, green matcha powder and vanilla bean powder and stir until combined.

Take the pan off of the heat and pour the mix into silicone moulds or a glass baking dish. Refrigerate the gummies until solid, about 1-2 hours for molds or 3+ hours for a glass dish. Store the gummies in the refrigerator for up to a week.

Thermomix
In a small bowl, stir the beef gelatine into the shot of espresso (add water if needed so that you’ve 1/2 cup of liquid) until mixed.

Set the Thermomix to 50C for 5 minutes at speed 4. Add the coconut cream, coconut oil, sea salt, sweetener and vanilla bean powder and spin until combined. Then add the dissolved gelatine mix to the Thermomix bowl and spin at speed 8 for another 5 minutes. The last 1 minute add the green matcha powder until desired flavour.

Pour the mix into silicone moulds or a glass baking dish. Refrigerate the gummies until solid, about 1-2 hours for molds or 3+ hours for a glass dish. Store the gummies in the refrigerator for up to a week.
