CHAI PUMPKIN BITES

I had some left over pumpkin puree which inspired me to make these pumpkin and chai spiced bites.

I often freeze pumpkin puree in the freezer in 1 cup portions. One way to make pumpkin puree is to cook then in the oven until soft and then puree them.

INGREDIENTS

4 tbsp Grass fed beef gelatine
½ cup Water
2 cups Coconut cream (or 400ml can)
1/3 cup Coconut oil
1/2 cup Pumpkin puree
2 tbsp Honey or rice syrup
1 tsp Cinnamon powder
1/4 tsp Cardamon powder
1/4 tsp All spice powder
1/8 tsp Ginger powder
Large pinch of sea salt

 

DIRECTIONS

Saucepan

In a small bowl, stir the beef gelatine into the cold water.  Set it aside to let the gelatine bloom for 3-5 minutes.

Add the coconut cream, coconut oil, pumpkin puree and sea salt to a medium saucepan. Place it over low heat and stir until the mixture is smooth. Turn the heat off and add the bloomed gelatine and continue stirring until the gelatine is dissolved. Then add sweetener, cinnamon, cardamon, all spice and nutmeg powder and stir until combined.

Take the pan off of the heat and pour the mix into silicone moulds or a glass baking dish. Refrigerate the gummies until solid, about 1-2 hours for molds or 3+ hours for a glass dish.  Store the gummies in the refrigerator for up to a week.

Thermomix

In a small bowl, stir the beef gelatine into the boiling hot water until mixed.

Set the Thermomix to 50C for 5 minutes at speed 4. Add the coconut cream, coconut oil, pumpkin puree, sweetener, sea salt, cinnamon, cardamon, all spice and nutmeg powder and spin until combined. Then add the dissolved gelatine mix to the Thermomix bowl and spin at speed 8 for another 5 minutes. The last 1 minute add the green matcha powder until desired flavour.

Pour the mix into silicone moulds or a glass baking dish. Refrigerate the gummies until solid, about 1-2 hours for molds or 3+ hours for a glass dish.  Store the gummies in the refrigerator for up to a week.
